Butter Pecan Tarts

Butter Pecan Tarts (made with nuts, no raisins) – my favourite!

This delicious and simple recipe for Butter Tarts originated with my mother-in-law, Florence. A favourite at Christmas! You can make the Butter Tarts with nuts and raisins or make Butter Pecan Tarts, by adding more nuts and eliminating the raisins

Ingredients for Butter Tarts:

2 eggs
1 cup (250 ml) corn syrup
1 cup (250 ml) brown sugar, lightly packed
1/2 cup (125 ml) butter substitute, melted
1/4 cup (60 ml) cream
1 1/2 tsp (7.5 ml) vanilla

1 cup (250 ml) seedless raisins
1/2 cup (125 ml) pecans or walnuts, chopped
OR
Pecans Only – 1 1/2 to 2 cups (500 ml) pecans, chopped

24 to 30 Tart Shells (homemade or store bought)

Preparing Butter Tarts

  1. Beat eggs. Add remaining ingredients in order to mixture.
  2. Spoon filling into unbaked tart shells (store bought or homemade), to at least 2/3 full.
  3. Bake 15 to 20 minutes at 375 degrees.
