This delicious and simple recipe for Butter Tarts originated with my mother-in-law, Florence. A favourite at Christmas! You can make the Butter Tarts with nuts and raisins or make Butter Pecan Tarts, by adding more nuts and eliminating the raisins
Ingredients for Butter Tarts:
2 eggs
1 cup (250 ml) corn syrup
1 cup (250 ml) brown sugar, lightly packed
1/2 cup (125 ml) butter substitute, melted
1/4 cup (60 ml) cream
1 1/2 tsp (7.5 ml) vanilla
1 cup (250 ml) seedless raisins
1/2 cup (125 ml) pecans or walnuts, chopped
OR
Pecans Only – 1 1/2 to 2 cups (500 ml) pecans, chopped
24 to 30 Tart Shells (homemade or store bought)
Preparing Butter Tarts
- Beat eggs. Add remaining ingredients in order to mixture.
- Spoon filling into unbaked tart shells (store bought or homemade), to at least 2/3 full.
- Bake 15 to 20 minutes at 375 degrees.
