My sister introduced me to freezing avocados that are ripe or getting beyond ripe, when you’re not ready to use them right away.
I admit, I was skeptical! But it is surprisingly true! You can freeze avocados, pull them from the freezer and they’re as good as the day you popped them in the freezer. They are a bit mushier, but still work well for using in salad dressings and even guacamole.
This weekend I made guacamole from frozen avocados and the difference is not easily noticeable. (Of course, I knew because I had made it.)
Consider using half fresh avocados and half frozen and thawed avocados. The guacamole will be as good as it would have been if you used all fresh.
