One of my favourite ways to eat quinoa is cold in a salad. This is a recently discovered favourite after having a lunch with my friend Kathleen Hatley (MyClutterCoach.ca) at the Italian Deli on Dewdney Trunk Road in Maple Ridge. (It used to be Crumbs Bakery).

After tasting their delicious Quinoa Salad I decided to give it a try too — I hadn’t been a big quinoa fan before that — I am now!

INGREDIENTS –

cooked quinoa (cook like you do rice with just a little less water so that it it doesn’t become too soft – a rice cooker works)

assorted raw veggies diced/cut up, for instance:

  • green onions
  • carrots
  • zucchini
  • peppers
  • and anything else you’d like 🙂

apple, chopped up, or raisins/craisins (optional)

cilantro, basil, parsley or ??, finely chopped

your favourite dressing

any other seasonings you’d like to include

DIRECTIONS –

  1. Mix it all together and enjoy! Great for weekday lunch or as a side dish for dinner.
