One of my favourite ways to eat quinoa is cold in a salad. This is a recently discovered favourite after having a lunch with my friend Kathleen Hatley ( at the Italian Deli on Dewdney Trunk Road in Maple Ridge. (It used to be Crumbs Bakery).

After tasting their delicious Quinoa Salad I decided to give it a try too — I hadn’t been a big quinoa fan before that — I am now!


cooked quinoa (cook like you do rice with just a little less water so that it it doesn’t become too soft – a rice cooker works)

assorted raw veggies diced/cut up, for instance:

  • green onions
  • carrots
  • zucchini
  • peppers
  • and anything else you’d like 🙂

apple, chopped up, or raisins/craisins (optional)

cilantro, basil, parsley or ??, finely chopped

your favourite dressing

any other seasonings you’d like to include


  1. Mix it all together and enjoy! Great for weekday lunch or as a side dish for dinner.
